Bryan, my younger ds has been pestering me to bake him an oreo choco cake since Teacher's Day. He wanted exactly the same cake I baked for his teachers. As promised, I made him one and he even helped me with the decor.. he was happy over the moon..

Brandon, my elder ds wanted something cool and refreshing... I settled on Lee Lee's mango pudding which i have not make for a long time...

Oreo Cheesecake

first time trying out a baked cheesecake.... it took me abt an hr and half to bake it, chilled for at least 12 hrs before we ate it... that's long waiting... anyway, my kids said is worth waiting cos is very yummy and really a very cheesy cake .. kekeke...

This recipe was taken from Kraft website... happy trying..

2 pkt PHILADELPHIA Cream Cheese, softened (i used 250g x 2 bars)
1/2 cup sugar
1/2 tsp. vanilla
1/2 cup sour cream
2 eggs
6 OREO Chocolate Sandwich Cookies, coarsely chopped (about 3/4 cup), divided
1 OREO Pie Crust
*(for the crust, I used abt 3/4 pkt of the oreo (w/o cream), added 1/4 cup of melted butter)

1)PREHEAT oven to 325°F. Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Stir in sour cream, mix well. Add eggs; mix just until blended. Stir in 1/2 cup of the cookies.

2)POUR into crust. Sprinkle with remaining chopped cookies.
BAKE 35 to 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight.

Claypot Chicken Rice

Made this delicious Claypot Chicken Rice for dinner last weekend.. It tasted just as good as those selling outside kekeke....*proud mode on* Bil's family was at my place for dinner and I am glad that they enjoyed it very much!

Here u go....

accidentally logon to a food website while surfing the net.... i have made some modification to the ingreds and method. happy trying..

2 chicken whole leg, cut into pieces
6 -8 pcs chinese mushroom
1 tbsp oil
5 pips garlic, remove skin, sliced
5 shallots, remove skin, sliced
500ml water

2 tbsp light soy sauce
2 tbsp shaoxing wine
1 tbsp sesame oil
1 tsp oyster sauce
dash of pepper
* i added a few drops of dark soya sauce for a nicer color.

toppings and garnishing
1 pair chinese sausage, sliced (pan-fry, set aside)
any vegetables to yr preference (boiled, set aside)
1 stalk spring onion, cut into shorter length
*dark soya sauce (optional)

1. Heat up 1 tbsp in clay pot, saute garlic and shallots until fragrant. Add in chicken and mushrooms, stir well.
2. Add in water, seasoning and bring to boil. Lower the heat and cook until the gravy is thick. Set aside.
3. With very small fire, place cooked chicken and mushroom w/some gravy on top of the rice, simmer for a while, top with sausage, veg and spring onion before serving.
*I pre-cooked the rice in claypot first. set aside.

I luv adding dark soya sauce to my claypot chix rice, so yummy!
