Durian Puffs/Tarlets/Crepes, Chocolate Eclairs & Cream Puffs

Is the durian season now. I bought some durians from my market and wondering what to do with the leftover as only younger ds is the one eating it... Then I decided to do with it with Durian Puffs and at the same time, made some Chocolate Eclairs and Cream Puffs for those non-durian eaters at home.

The Chox Pastry recipe is shared by a forum pal, chilipadinut. It's really good, definitely a keeper for me!

Dad's Birthday

Is my dad's birthday on 20th July and I baked him a fruit cake. That's is his favourite! As I was on leave, I delivered the cake to my dad in the morning while on my way to ds's school to help out in their school charity fair.

Rich Fruit Cake For Father's Day

As both dh and fil do not like cakes with cream so I baked them a fruit cake instead.

Heart-shaped Fruit Cake


with simple ribbons decor

Ingredients:-

(A)Fruit Mixture:
400g mixed sultanas,currants and golden raisins
150g mixed peel
*Soak in brandy (I soaked for a month):

(B)grated skin of one lemon & one orange

(C)Butter Mixture:
250g butter
250g sugar
4 eggs

(D)Flour Mixture:
350g plain flour
1 tsp baking powder
a pinch of salt
*sift all together


Method:-
1)Melt (C)butter and sugar in a pot till dissolve. Mix in eggs, one at a time when butter mixture is slightly cool.

2)Add in(D)flour mixture to the butter mixture, a little at a time and mix well.

3)Mix in (A)fruit mixture &(B)grated skin of lemon and orange to the batter.

4)Lined the cake pan and pour in the batter.

5)Preheat oven and bake for about 1 to 1.5 hours at 160°C.

Brunch Scones

Have not been baking for a week as I was away for holidays. Hands started to feel itchy again and so I made some scones for afternoon tea yesterday.

Gifts from my niece, Yee-Ling

My 11th years old niece, Yee-Ling gave me 2 pretty gifts yesterday. Is a token of appreciation from her for sharing with her most of my bakes. She loves cakes, muffins and cupcakes with frosting very much. Glad that she loves them.

Esparto 123 Chicken

Made Esparto123 using chicken instead of spareribs and the taste was marvellous. My family love it very much. I cut down on sugar to suit my family.

Chocolate Cupcakes (Recipe by Ratna)

Mandy recommended using Lindt cocoa bar for ratna's cupcakes recipe. Went to NTUC at WS to search for it and i bought 2 different types, 85% & 70% cocoa bars. I did 2 batches using different cocoa bars and of course the aroma is very much stronger for 85% lah! It smells good during the process of baking and after baked, mil and ds gobbled few pcs at one go! It sure very tasty and I'm very sure that all chocolate lovers gonna love these! It's very chocolatey, very rich!

Brownies & Tao-Suan



Baked some brownies and cooked tao-suan for a potluck gathering yesterday.

Brownies

Ingredients:
90g butter
120g dark chocolate
120g plain flour
1/2 tsp baking powder
4 tbsp cocoa powder
2 eggs
1/4 tsp salt
3/4 cup soft brown sugar (i use 1/2 cup)
1 tsp vanilla essence
*For toppings: chocolate chips, almond slices or walnuts

Method:-
1. Place butter and chocolate in a bowl. Stand in hot water until melted. Leave to cool.
2. Beat eggs and salt together. Add sugar to eggs mixture, beat thoroughly.
3. Add in vanilla essence and butter/choco mixture.
4. Add in sifted flour,cocoa powder & baking powder. Mix well.
5. Add in toppings as desired. Pour batter into a baking tray with baking paper.
6. Preheat oven at 180c and bake for abt 25 mins. Use a skewer to test for doneness.

It's my brother, Samuel's b'day on 3rd May. We had an early celebration on May Day, 1st May, tim-sum at Crystal Jade Tampines. The Q was so long that we waited 45 mins to get a table. The reason being they only ve 2 bigger tables that can sit 10 or more pax. It took us not more than one hour to finish the food cos we were too hungry liao... We did some shopping at Metro and Isetan after our makan.
