Home-Baked Muffins by Alan Ooi (Stir & Bake Recipe)

I would like to share this simple muffin recipe by Alan Ooi, a professional baker cum instructor, and also a baking Consultant of Y3K. In this book, he shared a total of six muffin recipes. All the recipes are set out in an easy-to-follow format which make home-baking so easy.

I am sharing one of the six recipes. I have baked many many times since I bought this baking book.




BLUEBERRY MUFFINS
yields : 13 muffins

Ingredients:
(A)
290g plain flour
1 tbsp baking powder


(B)
230g caster sugar

(C)
3 eggs
120ml fresh milk
200g melted butter
1tsp vanilla essence

(D)
200g blueberry pie filling

Method:
1. Preheat oven to 190deg. (I set at 180deg)
2. Sieve ingred (A) into a big mixing bowl. Add in ingred (B), mix well.
3. Add in ingred (C) slowly, beat with a ballon whisk to combine ingred.
4. Spoon no. (3) into a piping bag. Pipe mixture into paper-lined tart moulds till three-quarters full. Arrange on a baking tray.
(I didn't follow. I used a measuring cup)
5. Spoon Ingred (D) into another piping bag. Pipe some filling into no. (4). Use a toothpick to create a swirling effect.
6. Bake no.(5) in the preheated oven for 20-25 mins or until Cool on wire racks.


I have used the above-recipe as the basic recipe, and just add any favourite filling of your choice. The followings are the different flavours of muffins that I have baked so far using this recipe....oh yes, I also added peach and strawberry slices as fillings too but didn't manage to take the pic.

Give it a try! I believe you can bake them well too :)

Oh ok, just figured it out. THe piping bag is what helped make it smooth and round. THanks for the tip.

D, the texture is soft and moist, the children like it. Have you try baking a batch already? I didn't use the piping bag, i simply just used a spoon to fill the cupcake moulds with 3/4 batter, and it came out rounded top :)

Hi there, I tried your versatile no-mix muffin recipe 3 times but each time they turn out wet on top. Is it suppose to look undone when its ready? Do I still test it with a skewer cos they seem to be still wet?

And also, my muffins turn flat everytime I bake them, not rounded top like yours which is lovely.

Will this recipe turn out better? And thanks so much for sharing.

So sorry to hear about this. So far I have no prob with my muffins. They are well-baked, not wet at all, and all rised reasonably. Just remember to mix well but not OVERMIX them. This will result in heavy texture. I used a skewer to test the doneness. Once comes out clean, the muffins are ready. Btw, i filled my papercup with 3/4 fillings to get a high muffin.

May I know what are the fillings that you used for your muffins?

FYI, I have tried this Alan Ooi's muffin recipe many times and all were successful:)Give it a try. Let me know if you need more info.

Thanks for your advice.

I did not overmix them cos the texture is really soft & light on the inside. Just the outside (top) is wet & flat. I only used choc chips as fillings. So, when i test with a skewer, my chips kinda melt inside and the skewer comes out slightly wet although I know its when i tested dry on other areas of the muffin.

No worries, I will try this recipe instead and see if it works. Never give up right?

Thanks Jes for this wonderful recipe. I tried it out last weekend for my son's tournament and it is great. I didn't bother with mixing it slowly though and it is still soft and crumbly.

Sorry Kurungani, i got my books mixed up. It was another baking book which she bought for me. The Stir & Bake book i bought it during a book fair, that was a few months back. Guess you can find it from the local bookshops here.
